How to make the perfect coffee muffin

 

Start by preparing the coffee using the moka pot or the espresso machine and leave it to cool. In the meantime, take a bowl and add the flour, baking powder and sugar and mix by hand with a whisk. In another bowl, add the eggs, milk, oil and coffee and mix everything together. Now combine all the liquid ingredients with the dry ones and continue mixing until you have a uniform dough.

 

Use muffin cups, remember to butter and flour them first, then pour the mixture so that each cup is almost 3/4 full. Set the oven to a temperature of approx. 180°: you are ready to bake your wonderful coffee muffins for about 15 minutes. When the time is up, test the muffins with a toothpick to make sure they are not still raw inside, if they are, bake them for another 15 minutes.
