Of Anglo-Saxon origin, these golden pancakes have made their way into Italian homes in recent years. A classic American breakfast - the pancakes are prepared with maple syrup or fresh fruit and our pancake recipe adds an Italian touch with coffee.

How to make coffee pancakes


First of all: prepare the coffee in the moka pot and, when ready, pour it into a container to cool. Then take the eggs, and separate the yolks and egg whites into two bowls. Add the sugar to the egg yolks and mix together with a whisk, until combined, and you have a uniform cream. Then add the flour, milk, coffee, and salt and continue whisking.


Beat the egg whites until stiff and pour them into the mixture you have just prepared. Combine everything thoroughly, taking care to mix from the bottom up to preserve the whipped egg whites. Cover the bowl with a cloth or plastic wrap and leave to stand for at least 30 minutes in the fridge.


To cook the pancakes, take a medium to small non-stick frying pan: melt a knob of butter and pour in the mixture, a little at a time, using a ladle. Cook these delicious pancakes on both sides until golden.


Stack three or four pancakes on a plate and add your favourite: icing sugar, dark chocolate flakes, whipped cream, jam or honey.
